These pearl onions are poached in an acidic bath to produce a fresh, natural, savoury flavour and crisp cocktail onion crunch. The martini’s savory second cousin, the Gibson, uses a pickled onion in place of a typical olive to add an umami undertone to the classic cocktail. To make one, add 2.5 oz of gin or vodka, and 0.5 oz dry vermouth to a mixing glass with ice & stir. Strain into a chilled cocktail glass and garnish with 1 or 2 of our pickled cocktail onions.
